Blueberry gingerbread, is a great change from classic gingerbread. Still moist and spicy but with a burst of healthy blueberries.

Ingredients Directions
1) 1/2 cup vegetable oil Preheat the oven to 350 degrees F.

Grease and flour an 11" x 7" baking dish.
In a large bowl beat together the first group of ingredients (1-3).

Then beat in egg.

In another bowl sift together the dry ingredients (5-10). Mix in with the egg mixture alternately with the buttermilk. Mix well.

Gently fold in blueberries.

Pour batter into prepared baking dish and sprinkle sugar on top. Bake for 40 minutes.

Bread is done when a knife is inserted near the center comes out clean.
2) 1 cup sugar
3) 3 tbsp molasses
4) 1 egg
5) 2 cups flour
6) 1 tsp cinnamon
1/2 tsp nutmeg
8) 1/2 tsp ginger
9) 1 tsp baking soda
10) 1/2 tsp salt
11) 1 cup buttermilk
12) 1 cup fresh or frozen blueberries: dusted with flour
13) 2 tbsp sugar
